Canned Tomato is an excellent source of various vitamins and minerals. A single half cup serving provides over 30% of the Daily Value for vitamins C and K as well as manganese. They also contain moderate amounts of dietary fiber, vitamin A, vitamin E, potassium, copper, iron, magnesium, phosphorus, zinc, and niacin.
The lycopene content in tomatoes is especially notable. As a powerful antioxidant, lycopene has been linked to reduced risk of certain cancers and heart disease when consumed regularly. Canning does not significantly impact the lycopene levels compared to fresh tomatoes.
